Rhubarb Gin Fizz
Ingredients
Dry Gin
35ml
Fresh Lemon Juice
15ml
Aquafaba
15ml
Ice Cubes
As needed

100ml (chilled)
Method
1.
Pour the gin, lemon juice and aquafaba into a cocktail shaker. Half-fill with ice, seal and shake vigorously for 15 seconds.
2.
Fill a Collins glass with ice and strain in the gin mix. Top with the chilled Sparkling Raspberry & Rhubarb and let it gently blend.
3.
Thread three fresh raspberries onto a cocktail pick and rest it inside the glass to garnish.
